Colombia 〉 Finca Galaxia microlot

Osito has become one of our mainstay importing partners, in large part because of the consistently outstanding coffees they source from Colombia. It's difficult, sometimes, to pick from the samples we receive, but this spring, Nemecio Ramos's jumped right out. It's a microlot of caturra, a classic cultivar that Rob Hoos dubbed "sessionable." We couldn't agree more with that description. You could drink it all day. It's sweet, caramelly, super smooth, with highlights of red fruit acidity.

Processing details: Harvested during the fly crop (mitaca) this caturra microlot from Sr. Ramos's 3 hectare farm, Finca Galaxia, was de-pulped and fermented for 48 hours in plastic bags. After that it was rinsed and dried inside a parabolic greenhouse solar drier for 18-20 days before being milled.
