There is so much that makes coffee unique, from where it's farmed and how it's processed to how you brew it. Our hope is that drinking our coffee will expand your knowledge a little. If there is something not covered below, please reach out to us and we'll do our best to answer your questions.
FAQs
when will my coffee arrive?
We are a small-batch roaster, with Tuesdays being our only production day (for the time being). To ensure your coffee is shipped by Thursday, you must have your order in no later than 09:30 EST Tuesday morning.
should I drink my coffee fresh?
Some in the industry think the fresher the better. Others think you should rest coffee for 10 days or even two weeks after roast date. We err on the latter side, but we've also had amazing cups of coffee from a batch only a few days old. So, in the end, it's entirely up to you. The best thing you can do is experiment.
can i get my coffee ground?
Because our aim is to provide our customers with the highest quality coffee experience we can, we only ship whole-bean coffee.
do you have a cafe?
We do not have a cafe, but our neighbors at the Cornwall Market serve our coffee behind the bar, in addition to stocking retail bags. Stop in for an espresso and a pastry.
If you're interested in visiting the roastery, our office hours by appointment, so drop us a line and we'll figure out a time.
how should i brew my coffee?
That's up to you. When we're not cupping coffees in the roastery we tend toward a chemex, but that's just part of our personal ritual, something unique to us. Whatever your ritual is, our coffee will most likely work for it.
are your coffees certified?
We do not specifically seek out certified coffees nor do we carry any certifications ourselves. However, when a coffee we carry has a specific certification (organic, fair trade, rainforest alliance, etc.) we will note that information.
We believe organic practices, paying pickers and farmers above-market prices, and harmonizing agricultural practices with our natural surroundings are important goals, but we also understand that certification is a lengthy, onerous, and often expensive process that many small farmers cannot afford to undertake (as it would be for us, too). Thus, we use our best judgment and place our trust in our importing partners and the farmers themselves to strive to better the industry, even if it doesn't come with an official stamp of approval.
are your bags compostable?
Yes. All our bags are compostable.
For our 1lb and 5lb bags, please remove and recycle the tin ties before throwing them in your compost.
For the 12oz. bags, everything. including the valve and zipper, are fully compostable for either a home compost or industrial composting facility.
tell me about your label?
We believe in adding human detail where ever possible and each bag we sell is hand stamped and labeled.
Our stamps were designed and linocut by our dear friend Candacee White, a painter and printmaker based in Tulsa, Oklahoma. We also have several original works of hers hanging in our home. You should view her art here.
do you offer local delivery?
We can accommodate some local deliveries, especially if you are part of our subscription service. Reach out to us if you'd want your coffee delivered.
