This coffee represents a lot of firsts for us. It is the first coffee we've offered from San Agustin, our first time partnering with Semilla Coffee, and a first coffee from the Monkaaba Project, a collectivist project founded by smallholders in and around San Agustin, Colombia. We loved the samples we received and jumped at the opportunity to showcase Andrés's output from his farm, La Primavera.
We find Andrés's coffee to be well-balanced, possessing clarity, a light- to medium-body, dried apricot aroma, pleasing notes of salted caramel, and just a hint of acidity.

Processing details: Cherries are harvested every 3 weeks. Fermentation is carried out in a cherry cellar in a 24-hour shed, then dry-polled the following day until the harvest is complete. After 4 hours, water is added to regulate the cherry temperature. After pulping, the cherries are left in majolica tanks for another 30 hours. After 2 hours of pulping, water is added to complete the 36 hours. After washing, the cherries are taken to a dryer for 15 to 18 days.
